100% Grass-Fed and Grass-Finished Beef

    

A small herd of Highland cattle is a key component to grassland management, brush control and soil building at Prairie Turnip Farm. The great, hairy beasts have a relatively calm temperament, where females make excellent mothers and bulls are protective and watchful with little propensity to cross perimeter fences to visit with the neighbor’s cows. We chose the breed because they are colorful, beautiful and well suited to our landscape and management goals. Top that off with the fact that they finish well on our native prairie and grassy woodland ecosystem and they are genetically both lean and tender.

A former registered Angus breeder, a somewhat skeptical Hank was sold on the meat when he tasted his first loin roast from the herd that provided our foundation stock. Our animals receive no injections or chemical pours and have been selected and managed for natural parasite resistance. We have young females for sale from time to time, as well as 30-month old slaughter animals. As with any lean meat, you will want to slow your cooking some and take care not to cook it to well done to preserve its flavor and texture. We prefer ours at a warm pink centered medium rare. Try some grilled over hedge (Osage Orange) wood coals and you won’t be disappointed.
